After a lengthy proving process, every day at piazza dei signori 1 begins with the heady scent typical of the best italian tradition, namely fragrant and puffy leavened pastries baking in the oven. The aroma is one of caramelised butter, vanilla and wheat flour. Available in a wide variety of types, all sharing the same lightness, digestibility, fragrance and intensity.

Individual portions

The pastry-making skill of Elena Lanza, whose extensive french experience goes hand-in-hand with italian tradition, is expressed to the full in the individual portions, which are small masterpieces of taste and architecture in multiple different varieties. A delight for the eyes and the palate. All her pastries stand out for their clean, honest flavours and reduced use of added sugar.

Large baked goods

The partnership between matteo and elena comes to the fore in the large baked goods, particularly the panettoni and colombe. For a long time now, they have been experimenting with flours, ingredients, proving methods and formidable doughs, with the aim of surpassing themselves, year after year, in their quest for “perfect baked goods”. Obsessive cooks always feel this goal is just “another step away”, much to the advantage of their guests.

Large desserts

The very finest products, devised in a veritable “research laboratory” directed by elena, as an emanation of the michelin-starred restaurant on the first floor, acting as a pendant to the kitchen directed by matteo, with whom she converses side by side in gastronomic performances of the highest standard. Perhaps the secret behind this subtle consonance lies in the encounter between the savoury and sweet brigades.

In perfect harmony

As so well explained by Elena: “it’s important for me to let guests conclude their taste experience in harmony with what they have just consumed. As a result, the lightness of matteo’s dishes also features in the desserts i present immediately afterwards”. This seems to paraphrase hugo von hofmannsthal’s famous statement: «the genius creates concordance between the world he lives in and the world he experiences».
