Traditional pizza in its best form
Simplicity, goodness, fragrance, lightness, quality of the toppings: Matteo, as a great pizza enthusiast, has always wanted to find this in the dish he loves, and which can be considered the symbol, often misrepresented and reviled, of Italian cuisine in the world. He almost never found what he wanted on his plate. To the point that as soon as the opportunity arose he didn’t hesitate for a moment in creating a place in which to fulfill his desires, which today are the desires of many, dazed by an inflation of so-called “gourmet pizzas”. .

The venue will extend over the entire large surface area of one of the oldest public places in Vicenza, “Antica casa della Malvasia”, completely renovated and refurnished in collaboration with Cap Design, to give the rooms great airiness and cleanliness formal, also being able to count on a vast seating area in front of the large windows of the venue. Inside, some corner walls will be dedicated to the display of colorful op-art works of art dedicated to the tutelary deity of Vicenza (and Matteo), Andrea Palladio.
A rule dictated by tradition in balance with contemporaneity
Clearly, great attention will be paid to flours, yeasts, doughs and their resting times, as well as to the type and cooking times, not to mention the condiments, which will be supplied by the same highly selected suppliers with whom Matteo has been collaborating since years at the starred restaurant on the first floor of Piazza dei Signori. What will make the difference will be the balance of all these elements, these factors – without ever reaching the extremes of often indecipherable tasting pizzas.
A broad, eclectic proposal
In addition to traditional pizza, revitalized by superior quality ingredients, Pizza dei Signori will be able to boast a range of appetizers and main courses that will not be a simple alternative to pizza: a choice selection of dishes characterized by quality raw materials and recipes simple and light, perhaps as a prelude to the main course in their “cicchetto” version.
Light and gentle sweetness
And here too, to close the circle, we find the desserts: light, centered on a well-defined and enhanced protagonist ingredient, which stands out from the collaterals, with little or no added sugar, often inspired by seasonal fruit, always characterized by a touch of originality. The elevation of the dessert: a choice that goes against the trend compared to the traditional “final filler” of classic pizzerias.

And as a counterpoint to the menu, an extensive drinks list with around 500 wine references well distributed between established labels and small natural producers could not be missing; a special selection of Italian and foreign craft beers; a selection of teas specially proposed as an accompaniment to the pizzas; an extensive menu of cocktails and spirits; as well as numerous quality non-alcoholic drinks. In the full spirit of the Pizzeria, the choice of wines by the glass is always wide, constantly rotating.
